Ingredients:

Salmon Fillet, cut into 4 pieces - 12 ounce
Coarse-grained Salt
Freshly ground Black Pepper
Toasted Almond Parsley Salsa, for serving
Baked squash, for serving (optional)

Toasted Almond Parsley Salad:

Shallot - 1
Red Wine Vinegar - 1 tablespoons
Coarse grain Salt
Capers rinsed - 2 tablespoons
Fresh Flat-Leaf Parsley - 1 cup
Almonds, toasted - 1/2 cup
Extra Virgin Olive Oil

Cooking Procedure:

Preheat the oven to 450 degrees F and season salmon with salt and pepper. On a non-stick baking sheet or in a non-stick pan with an oven-proof handle place the salmon with skin side down. Bake for about 12 to 15 minutes or bake until the salmon is cooked through. Serve with squash and the Toasted Almond Parsley Salad.

Toasted Almond Parsley Salad:

Add the minced shallot to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let it rest for 30 minutes. Chop the capers, parsley, and almonds roughly and add to the shallots. Add the olive oil. Now mix again and adjust the seasonings.
